Every month or so I accidentally make a breakfast that I then like way too much and become obsessed with it for a couple of months, making little variations on it. The latest was this breakfast ice-cream/frozen smoothie bowl for which you actually need only 3 ingredients and they’re all pretty good for you. It only takes a couple of minutes and it is sooo fresh (it is getting cold here in Melbourne so it will soon be time for some warmer breakfasts but as long as my frozen mango stash lasts I’ll stick with this. And if you’re somewhere back in Slovenia or elsewhere on the northern hemisphere, then this will be just in time for the nice warm weather.)
INGREDIENTS:
Coconut & Mango Ice-Cream:
- A cup frozen mango (the smaller the pieces the easier will it be for your processor)
- Juice of half of lime
- 4 tablespoons good quality coconut milk
Toppings:
*Only some ideas, feel free to use whatever you like most
- Berries of choice
- Coconut chips
- Cocoa Nis
- Nuts
- Buckinis
- Goji Berries
METHOD:
- Put the mango, coconut milk and lime in a food processor/blender and blend for a couple of minutes. As it will be quite thick and frozen maybe stop it a couple of times in between and give it a bit of a stir, then blend again.
- Place it in the bowl or a plate of your choice and cover with your toppings. You can easily just have it without it all, but everything is better with some nuts, coconut and alike on top.
*If it seems your processor has a bit of a hard time blending it all, take the mango out of the fridge like 5 minutes before using or chop it into small pieces and that should make it way easier.
